SAWACHI PROJECT

Japanese artists KOSUGE1-16 (Chishino Kurumada and Takashi Tsuchiya) will lead a food project entitled ‘Sawachi Project’. Based upon a traditional sharing meal from the Kochi region in Japan, the project will engage Colchester’s diverse communities in a Japanese custom. Food making, taking place in Firstsite’s restaurant kitchen, will be accompanied by workshops to decorate ceramic serving plates brought from Japan. Participants will be encouraged to paint important moments, icons and landscapes from their culture. Painted plates will be fired locally, before being used as large sharing plates at weekly organised food parties, hosted in the Restaurant and Events Space at Firstsite.

The project will include recipe swapping and cookery classes as well as ‘Okyaku’ (dinner party for guests). Refugee Action-Colchester, with whom Firstsite has an existing relationship and who begin a series of cookery classes with Syrian refugees at Firstsite in April, will partner and assist in the cookery classes.

History of Sawachi: Sawachi is the traditional food culture from the Kochi region of Japan. Originally enjoyed only by the upper-class society of the area, food is placed on a large serving plate. Over time the tradition has become available and enjoyed by all. The ceramic plates used for Sawachi were exported from the Arita and Kutani regions which distributed goods across Japan and traded with Europe in the 17th century.

What is new or significant about this?

The project is inspired by the historical similarities between Colchester and Kochi. Colchester is Britain’s oldest recorded town. It has a rich and important history of invasion and immigrant settlement. In 43AD it became the capital of Roman Britain, and from the 1560s onwards Flemish and Dutch Protestants, fearing religious persecution, came to England and many settled in Colchester making an important cultural and industrial contribution to the town. In 2017 Colchester became a City of Sanctuary and is committed to creating a culture of welcome and safety for everyone.

Kochi is located far from the main island of Japan and historically provided sanctuary to immigrants, aristocracy and Samurai warriors fleeing political persecution. Being multicultural, Kochi has become open to new cuisines and traditions over time. Cooking together and sharing meals from one large dish developed in Kochi to create a generous and welcoming culture of eating.

The ‘Sawachi Project’ will build upon Firstsite’s work to significantly serve its diverse communities, and its mission to inspire people through innovative art and culture that contributes to the wellbeing, learning and economy of the surrounding areas.

【概　要】 　日本の高知県に伝わる伝統料理「皿鉢（さわち）」を基にした、コミュニティプロジェクトです。　皿鉢料理は、封建時代には庶民が禁止されていた上流階級のみが楽しめる宴会料理でしたが、近代以降は高知県の庶民の間で独自に発展した文化です。それは同じ行事食である本膳料理や懐石料理とは異なり、約束事や形式は無く、自由奔放である事に大きな特徴があります。それは、本州から離れた高知は戦に負けた貴族や武士一族が落ち延びる為に逃避する土地であり、また太平洋という外海に面している事から様々な民族が流れ着く土地であったからではないかと推測します。さらに、高知では「宴会」の事を「お客」と言います。この呼び方もそういった部分から発展したとも考えられます。多様な文化が訳あって混ざり合っているこの土地だからこそ、寛容で大らかな晴れのスタイルが培われ、みんなで料理をつくることで共に日頃の慰労を示し、一つの皿の料理を分け合って食べる事で仲間意識が養われるものとして、独自の進化をしてきました。また、皿鉢料理に使う大皿には、有田焼や九谷焼などの絵柄が賑やかな物が好まれてきました。これらの皿も海を通じた交易によってもたらされたものでした。 　FirstsiteのあるColchesterは、ローマ時代にはイギリス侵攻の最初の拠点であり、その後もアングロサクソン、バイキングなどに支配された歴史を持ちます。そのような英国外から来た他民族が拠点としやすい立地から、現在も多様な民族が居住しています。コルチェスターにあるアートセンターFirstsiteでは、これまでにも移民や難民と地元の人々との交流を深める為のプロジェクトをしてきました。 　３年前にイギリス中西部の都市Birminghamに住んでいたKOSUGE1-16は「ラーメンJunko」というラーメン作りプロジェクトを行っていました。その時の経験をもとに今回はColchesterで食とアートを通じたワークショップで異なる民族間の多文化理解を促がすことはできないかと考えました。 　今回のプロジェクトでは、Colchesterに外から来た人々と元々居る人々が一緒に「皿鉢料理」を作り、「お客（※高知で宴会の事をお客と言います）」をすることで、新たな寛容の場を創出する事を目指します。「お客」というパーティーの場にはもてなす、持てなされるという関係性はなく、皆が文字通り「お客」であり「対等」である事で関係性の意識のズレを作ります。この皿鉢料理に使う大皿の絵は、ワークショプを通じて多くの民族の方々と一緒に描きます。描くテーマは「なぜあなたは今イギリスにいるのか？」です。言語では直接的な表現になってしまいがちなテーマでも、絵皿へのドローイングであれば具体的な理由だけでなく感情の欲動や大らかな物語も表現することができ、鑑賞する側も様々な解釈が可能になります。また、皿鉢に盛り付ける料理も、多くの民族の方々にそれぞれの郷土料理を作っていただきます。そして「お客（宴会）」で食事が進むことで皿に描かれた新たな光景に出会うでしょう。 　皿鉢文化という食を通じた交流の文化を理解いただき、ここで表現された様々な考え方やルーツを共有できる事を期待します。
